Ingrediends:
1 cup rice flour
1/2 teaspoon baking soda
2 teaspoon baking powder
1/2 teaspoon salt
2 free range eggs
1 1/4 cups buttermilk
Method:
1.Sift together rice flour, baking powder, baking soda and salt.
2.Combine buttermilk and eggs; add to flour mixture and beat with hand whisk until well blended.
3. Heat pan over medium heat with a bit of butter and cook until bubbles form. Turn and brown other side.
4. Serve up the pancakes warm with toppings of your choice.
